We found this lovely simple\nItalian-style mussel pot recipe you might enjoy. Here\u2019s to <em>la bella vita<\/em>!<\/p>\n\n\n\n<p><strong>Ingredients \u2013<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1.8 kg fresh, living mussels<\/li><li>120 ml white wine (alternatively, 1 tbsp lemon juice)<\/li><li>1 bunch of fresh parsley<\/li><li>2-4 cloves of garlic (to your taste)<\/li><li>4 tbsp extra-virgin olive oil<\/li><li>1 tsp black pepper<\/li><li>1 pinch of salt<\/li><\/ul>\n\n\n\n<p>Italian bread slices (optional)<\/p>\n\n\n\n<p><strong>Method \u2013<\/strong><\/p>\n\n\n\n<p>Pre-Cooking:<\/p>\n\n\n\n<p>Store the living mussels in the fridge, in an uncovered glass bowl, covered\nwith water until ready to use. (Note: Once the mussels have been cleaned, it is\nimportant to cook them as soon as possible \u2013 within a few hours)<\/p>\n\n\n\n<p>Rinse and scrub the shells to eliminate any trace of seaweed or debris\nand discard any broken mussels.<\/p>\n\n\n\n<p>One by one, grab each mussel and, pressing it gently but firmly with\nyour fingers, pull the little string (called byssus or beard) that sticks out\nfrom the shell and discard it.<\/p>\n\n\n\n<p>Rinse the mussels thoroughly until the water runs clean and store in the\nfridge until ready to cook.<\/p>\n\n\n\n<p>Cooking:<\/p>\n\n\n\n<p>Rinse and dry the bunch of parsley, then peel and crush the cloves of\ngarlic.<\/p>\n\n\n\n<p>Keep aside a small amount of the parsley for garnish, finely chopped<\/p>\n\n\n\n<p>Place the whole bunch of remaining parsley (un-chopped), the garlic, the\nolive oil and the mussels in a large pot. Cover with lid and place the pot over\nhigh heat.<\/p>\n\n\n\n<p>After 3 minutes, add the white wine, then add the black pepper and a\npinch of salt, stirring gently.<\/p>\n\n\n\n<p>Cover again and cook for 5 mins more, or just until the mussels\u2019 shells have\nopened.
