Wow your guest\u2019s this year with this gorgeous (yet so\nsimple) Berry Pavlova.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>Pavlova<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 eggs whites (at room temperature)<\/li><li>Pinch of salt<\/li><li>250g castor sugar<\/li><li>2 tsp of cornflour (sifted)<\/li><li>1 tsp white wine vinegar<\/li><\/ul>\n\n\n\n<p>Raspberry Coulis<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>125g fresh raspberries<\/li><li>Juice 1\/2 lemon<\/li><li>1\/4 cup castor sugar<\/li><li>1\/2 tsp of brandy (optional)<\/li><\/ul>\n\n\n\n<p>Topping<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>300ml fresh cream \u2013 whipped<\/li><li>1 x pomegranate<\/li><li>Raspberries, cherries and strawberries to\ndecorate<\/li><li>Bunch of holly or fresh mint<\/li><\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p><strong>Making the Meringue<\/strong><\/p>\n\n\n\n<p>Preheat oven to 120C. Line a baking tray with baking paper.\nUse a round baking tin to draw a large circle (22cm) then draw another circle\ninside it approximately 13cm wide.<\/p>\n\n\n\n<p>Beat egg whites and salt until soft peaks form. (TIP: make\nsure the egg whites are at room temperature) Beat in sugar, a small amount at\ntime until meringue is stiff and shiny.&nbsp;\nSprinkle over sifted cornflour, vinegar and fold in lightly. You should\nbe able to up end the bowl at this stage with no fear of anything coming out.<\/p>\n\n\n\n<p>Grab a dessert spoon and scoop a dollop of meringue. Place\nthis dollop between the outside and inside line. Repeat until a ring of\nmeringue is complete. Create a second layer of meringue on top of the first\nuntil second ring is complete. Flatten the top by smoothing the meringue.<\/p>\n\n\n\n<p>Place meringue in oven for 2 hours at 120C. When the 2 hours\nis up, turn off the oven and leave the meringue in the oven until completely\ncool. This is very important as there will be less risk of the meringue\ncracking and collapsing.<\/p>\n\n\n\n<p><strong>Raspberry Coulis<\/strong><\/p>\n\n\n\n<p>Blend fresh raspberries, lemon juice and sugar together\nuntil sugar has completely dissolved.
